I believe that was NecroMatador's doing, though I can't speak for how she managed to accomplish such a thing beyond just saying that she is probably made of magic. I recall her saying she was a seamstress by trade, so I imagine it had something to do with having the perfect tool for the job. (oh gog now I'm picturing her running around with some sort of "eye-removal tool")

Bluh, I feel terrible that I didn't have any more photos. I didn't really get to do much other than outfit it with my mods. SORRY
I don't think that would do it, plastic stuffed animal eyes have a rigged or smooth short little stick-like protrusion behind them that affixes to a washer really tight, if it's smooth it is secured with a metal washer with "teeth" and if they have ridges it usually uses a plastic washer.
When I removed the Pink Bunny's eyes, I discovered that not only were they secured like this, but that there was added plastic to the protrusion to seal it tight, in addition to an adhesive pad between the eye and the washer to further secure it. The result was a heavier modification than I anticipated.
Sorry about not updating guys, auduboniiAbjurer and I have been working hard on our addition, and haven't had time to update.
I'll try to get some pictures when I can.

There are several gif animating programs out there (I assume you want this, since paint can save static gifs.). GIMP is one that comes to mind that's free, though not easy to use, I've been told. I suggest just looking around or maybe asking around in the art forum. They would know better than I would.

Neither one of us has access to the photoshops...
But yeah, I've heard good things about GIMP as well, and there's also a plugin for Paint.Net that lets you make animated GIFs with it.
