High-speed kick to the eye, and if you're not terribly injured or interrupted after this, go for one of the back-spikes.
Not that there's anything wrong with that, of course.
You realize the eye is the obvious place to attack from this position. So you don't. You feint towards the eye, then jerk aside, and head for a backspine instead. This proves to be a good choice, as another energy beam sizzles by where you would have been. You strike the spine, and use your momentum to snap it off.
Try destroying/banishing it. If it works, then start useing it on the big one.
Good to know. dismembering this thing, even blowing it up will just mean making more foes to fight, though smaller. We need to destroy it completely. First thing first see if this thing will burn. Set the creature you have in your hands on fire.
.....oh man has that thing been burning the whole time? well, that does make sense. It's just that the first time we've seen the forest on fire for quite some time was in the monster's entrance animation so I automatically assumed that that was one of the things it did. Anyways it doesn't seem to affected much by all the fire around it, so... ice anyway?
